Two farms, one roaster, no warehouse of stale bags.

Both of these lots are bought directly from the farms that grow them and roasted after your order lands. Two origins, four roasts, nothing sitting in a warehouse.

Origin one

Zambia

A smallholder micro-lot, Catimor 129, washed and then shade-dried rather than pushed under full sun. Shade drying takes longer and gives up less of the sweetness, which is why the light roast still tastes like fruit instead of paper.

Zambia is a small origin by world standards, which is exactly why the lots that do come out of it tend to be picked carefully. There is no volume game to play.

Origin two

Uganda

Grown around Bududa, on the slopes of Mount Elgon in eastern Uganda, and hand-picked. Higher ground and cooler nights slow the cherry down, and slower cherries carry more sugar into the seed.

It is the rounder of the two. Where the Zambia goes bright, the Uganda goes deep, which is why it is the one most people end up putting in the espresso hopper.

Same bean. Four different finishes.

Roast level is not a quality ladder. It is a decision about what you want to taste. Here is the plain version.

Light

Bright and tea-like

The shortest roast. Origin character is loudest here: citrus and stone fruit in the Zambia, a sweeter red-fruit note in the Uganda. Best in a pour-over or a drip machine you trust.

Medium

The everyday one

Balanced, rounder body, still clearly the same coffee. If you are buying for a household with mixed tastes or an office, this is the safe order.

Dark

Deep and low

Roasted past the second crack's edge. Chocolate and molasses take over from the fruit. Holds up to milk and to a French press left standing.

Espresso

Medium-dark, built for pressure

Not a separate bean. It is a medium-dark finish tuned so it pulls sweet rather than sharp under nine bars. Works in a moka pot too.

Good coffee first. That is the whole trick.

Nobody reorders coffee out of duty. The mission is the reason this label exists, but the beans have to earn the second bag on their own. They do.
